Mr. Vicente Quimbo, the company's founder and chief executive officer, had the brilliant idea to launch Novellino Wines in 1999 with the goal of creating a wine brand specifically for Filipinos. The well-known businessman Nonoy has laboriously built his company into the only local winery with complete control over wine production, including harvesting grapes, blending, winemaking, bottling, labeling, and distribution.
On October 17, 2024, Novellino launched its new product line in honor of the company's 25th anniversary, which was witnessed by members of the local press, influencers, partners, and guests.
The event also features a tour of the state-of-the-art facility in Laguna for the local media, providing them with exclusive access and a sneak peek at the winery's newest machinery and technology.

Novellino's meticulous process of producing wine, from fermentation to bottling, is evidence of the exceptional craftsmanship of the Filipino people.
The first stage is fermentation, which is started by yeast turning the sugars in grape juice into carbon dioxide and alcohol. More sugars are converted to alcohol during the entire process, which is why Novellino is renowned for its "dry" wine.
The second procedure is centrifugation, which gets rid of lees and yeasts to stop further fermentation. The cutting edge Alfa Laval centrifuge from Sweden is the cutting edge apparatus that is being utilized. It's one of the first and few wineries in Asia with this kind of contemporary machinery.
Third, the procedure that refines the wine to adhere to guidelines and standards through clarification, filtration, and adjustment. The winery is proud of its three-stage microfiltration process, which guarantees pure liquid wine by eliminating particles as small as.45 microns.
The fourth step involves chilling wine to a temperature of 0 to -2°C. This enables the fermentation byproduct CO2 to be reintroduced, giving wine its fizzy, refreshing quality.
The wine is bottled as the final step. Fresh wine is poured into bottles after they have been cleaned and rinsed with reverse-osmosis purified water. Before being distributed, each bottle is dry sealed, corked, capped, and placed into a box.
